Sometimes, I get big-headed and think I’m an evil genius when it comes to sweets. I was craving ice cream (even though it’s been snowing all day). I had an idea- If you can make ice cream from blended banana, could you make ice cream bites with banana slices? The answer is yessss, yes you can. And they are delicious!
- 1 Ripe Banana
- 1/4 cup Peanut Butter
- 1/2 cup Dairy Free Dark Chocolate Chips (I used Enjoy Life brand-they don’t have soy lecithin in them!)
- A few pinches of Shredded Coconut
First, set up a double boiler. Once the upper pot gets warm, add your chocolate chips. While your chocolate chips melt, slice your banana and lay the slices on a piece of parchment paper on a cookie sheet. Place a little dollop of peanut butter on each banana slice. Set these aside for a minute. Stir your chocolate chips until they are totally melted. Carefully remove the upper pot of the double boiler and using a kitchen towel, wipe the condensation off the bottom of the pot. Drizzle a spoonful of the melted chocolate over each banana slice. This can get messy. Sprinkle shredded coconut over the top of the chocolate. Place the entire cookie sheet in the freezer. Wait an hour and enjoy!
