Gluten Free Veggie Lentil Loaf

Mmmmmm… Lentil loaf stuffed with veggies and topped with BBQ sauce? Yes, please!

Ingredients

  • 1 ½ cup Green Lentils, dry
  • 1 bunch Green Onion, diced
  • 2-3 cloves Fresh Garlic, diced
  • 1 stalk Celery, diced
  • 3 leaves Green Kale, chopped
  • ½ Green Bell Pepper, diced
  • ½ Red, Orange, or Yellow Bell Pepper, diced
  • ½ cup Mushrooms, diced
  • 1 cup GF Oats
  • 2 Tbsp Ground Flax
  • 6 Tbsp Hot Water
  • 1 Tbsp Oil
  • 2 tsp Sea Salt
  • 1 tsp Black Pepper
  • Vegan BBQ Sauce (I made my own- recipe below)

Preheat oven to 420 degrees Farenheit.

Begin by rinsing lentils and pouring them into a pot with 3 cups of water.Bring the water to a gentle boil and reduce heat to maintain a gentle simmer. Cook uncovered for 20-30 minutes. Add water if needed. The water should barely cover the lentils. Cook until tender.

Meanwhile, heat oil in skillet on medium heat. Add green onion and garlic and saute until tender. Add celery and saute until tender, then add peppers and mushrooms. Saute until tender. Add kale and salt and pepper. Stir and turn off heat.

Pour oats into a bowl and cover in water. Let soak for five minutes. Drain.

In a small bowl, whisk together flax and water. Let set for five minutes.

Combine all ingredients except for BBQ sauce in a large bowl. Mash together gently.

Pour mixture into a greased or parchment lined bread pan. Bake for 15 minutes, then remove from oven and spread BBQ sauce on top. Place back into oven and bake for an additional 30 minutes. Remove from oven, let cool for 5 minutes. Slice and enjoy!

Quick Homemade BBQ Sauce

Ingredients:

  • 1/2 cup Ketchup (or Tomato Paste)
  • 1 Tbsp Maple Syrup
  • 2 tsp Molasses
  • 1 tsp Yellow Mustard
  • 1 tsp Sea Salt
  • 1/2 tsp Black pepper
  • 1/4 tsp Smoked Paprika

Whisk together and enjoy!
