Roasted Vegetables with Chickpeas

This recipe has been one of my Thanksgiving traditions for three years running. It’s so simple and tasty.

Ingredients:

  • 1 can Chickpeas, rinsed
  • 1 Yellow Onion, chopped
  • 2 cloves Garlic, diced
  • 2 Yellow Potatoes, chopped
  • 1 medium sized Garnet Yam, peeled and chopped
  • 2 medium sized Carrots, chopped
  • 1 small tart Apple, chopped
  • 2 Tbsp Olive Oil
  • 2 tsp Sea Salt
  • 1/2 tsp Black Pepper

Preheat oven to 425 degrees Fahrenheit. Mix all ingredients together in a roasting pan. Cover and roast for 45 minutes or until vegetables are tender. Serve and enjoy 🙂
