I did my research on this one, seeing as there is some dispute about whether or not carrot greens are safe to eat. After doing my own research, I discovered that I personally feel that they are safe. I suggest doing your own research if this concerns you, however. They are rich in vitamin C, vitamin K, calcium, potassium, and all sorts of other nutrients. If you have any worry about the safety of consuming carrot tops, just skip this smoothie altogether, or just add some kale instead!
- 1 cup Cantaloupe or Honeydew Melon, chopped
- 1 cup Green Grapes
- 1 large handful Carrot Tops
- 1 cup Filtered Water
Add all ingredients to a blender, blend, pour, and enjoy! If you don’t plan on drinking this smoothie right away, some separation will occur, but it can easily just be stirred or shaken until combined again. It’s super refreshing and sweet.
