Creamy Wild Rice Mushroom Soup


Wild rice soup and Minnesota winters go hand in hand. I love to fill myself up on warm mushroom and wild rice soup and watch the snow fall.


  • 2 cups filtered Water
  • 4 cloves Garlic, minced
  • 1 Yellow Onion, diced
  • 3 stalks Celery, chopped small
  • 3 medium sized Carrots, chopped small
  • 1 small bulb Celeriac, peeled and chopped small (optional)
  • 2 cups Mushrooms, sliced
  • 2 cups Almond Milk
  • 1 cup Wild Rice, cooked
  • 1 cup Brown Rice, cooked
  • 3 tsps Sea Salt
  • 1 tsp Black Pepper


Heat water in stockpot over medium heat. Add garlic, sea salt, and onions and simmer until translucent. Add celery and simmer until almost tender. Add carrots, celeriac, mushrooms, and black pepper. Simmer until carrots and celeriac are just tender. Add wild rice, brown rice, and almond milk. Reduce heat to low and simmer for a half hour. Serve and enjoy πŸ™‚
