Roasted Garlic Hummus

I looooove hummus. It can easily be adapted to accommodate all sorts of flavors. It goes well with many types of vegetables and grains.

  • 1 cup Chickpeas, cooked
  • 1 head Garlic
  • 1 Tbsp Tahini
  • 1 Tbsp Lemon Juice
  • 1 Tbsp Olive Oil
  • 1 tsp Sea Salt
  • 1/2 tsp Cumin
  • 1/2 tsp Paprika

Preheat oven to 425 degrees Fahrenheit. Wrap head of garlic in foil. Roast for 15 minutes. Remove from oven and let cool for a few minutes. Slice off the root end. The garlic cloves should easily be able to squeeze out of their skin.

Add all ingredients to food processor. Blend until smooth. Enjoy with quinoa, steamed broccoli and cauliflower, and baked carrot and parsnips fries.
