Recently I had the joy of having my three-year-old niece spend the night at my house. I wanted to make a kid-friendly breakfast… Something Sophia would find fun. She named this ‘Purple Oatmeal’. Her favorite color is purple, so she ate a whole bowlful.
Ingredients makes 2 servings
- 1 1/2 cups Thick Rolled Oats
- 1 cup frozen Blueberries (I recommend frozen because as they thaw, they release juice and turn the oats purple)
- 2 cups Filtered Water
- 1/2 cup Orange Juice
- 1/2 cup Almond Milk
- 2 Tbsp Maple Syrup
- 1 tsp Sea Salt
Bring water to a boil in a medium sized pot. Add oats and stir. Reduce heat to medium low. Let oats cook for about ten minutes, or until soft, stirring frequently.
Add blueberries, milk, orange juice, maple syrup, and sea salt. Stir and cook for an additional 5-10 minutes, or until liquid has mostly evaporated and oats are creamy.
You could add pecans or almonds to this as well for some crunch.
