Have you ever had a young coconut? I don’t get them often since I like to try to eat as local as possible, but they’re soooo wonderful! Even on their own. They’re pretty fun/dangerous to open. At least, I haven’t found a way around repeatedly hacking away at the top until it cracks. Anyways, we had yet another snowstorm again, annnnd I wanted something tropical to make me feel like it wasn’t cold and snowy. So here it is. Simple, and amazingly delicious.
- Flesh and water of one young coconut (that’s it!)
Blend until smooth and enjoy. Believe me, it’s delicioussss!
