BBQ Chickpeas

I loooove BBQ sauce. So smoky and sweet. And chickpeas. I also looooove chickpeas. BBQ chickpeas on top of brown rice with some steamed kale on the side? Yes, please. This was an amazing, lazy dinner.

  • 1 cup cooked chickpeas
  • 1/2 yellow onion, diced
  • 2 cloves garlic, minced
  • 2 tsp sunflower oil (or whatever cooking oil you prefer)

BBQ Sauce:

  • 1/3 cup ketchup
  • 1 Tbsp molasses
  • 2 tsp sea salt
  • 1 tsp smoked paprika
  • 1 Tbsp maple syrup
  • 1 tsp black pepper
  • 1/4 tsp cayenne (optional)

Heat oil in skillet on medium heat. Add onions and sauté until translucent.

While onions are cooking, whisk together BBQ sauce ingredients.

Add garlic and chickpeas to skillet with onions.

Sauté until warmed through. Drizzle BBQ sauce over and saute for a few moments until caramelized.

Serve warm over rice with some steamed greens on the side. Enjoy!
