The other day, I realized I hadn’t had a baked potato in ages. It was cold out and I was lazy and craving comfort food, so it was the perfect time to make them. And, make them loaded… with coconut ‘bacon’ bits, ‘cheese’ sauce, and green onions. I don’t think I’ve ever had a baked potato sooo yummy before.
I made my yummy coconut bacon using Abby’s recipe, here. I also sprinkled them over a salad- that’s really great too. Thanks for the recipe, Abby!
- 1 large baking potato
- 1/2 cup nutritional yeast
- 1/2 cup almond milk
- 1 tsp apple cider vinegar
- 2 Tbsp tapioca starch
- 2 tsp sea salt
Green onions and coconut bacon for topping
Preheat oven to 400 degrees Fahrenheit. Using a fork or a knife, carefully poke holes all over potato. Wrap in foil and place in preheated oven. Bake for 45 minutes to an hour, or until tender.
When potato is close to done, heat almond milk in a sauce pan over medium heat. Whisk in remaining ingredients and reduce heat to low. Gently simmer until thickened.
When potato is done, carefully remove from foil. Slice in half and drizzle cheese sauce over. Top with green onions and coconut bacon. Enjoy 🙂
