Gluten Free Buckwheat Banana Bread

My good friend Nancy, a health coach residing in Alexandria, Minnesota, once made this banana bread for me. I immediately asked for the recipe. It’s soooo delicious! The other night, I had a guest at my home, and we decided to bake this banana bread (at eleven p.m. haha!). I was reminded of how great it was, and asked Nancy if I could share the recipe. So, here it is… A glorious, soft, simple, vegan and gluten-free banana bread.

Ingredients

  • 4 ripe bananas
  • 1/3 cup sunflower oil
  • 1/3 cup maple syrup
  • 3/4 cup buckwheat flour
  • 3/4 cup brown rice flour
  • 2 Tbsp arrowroot
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp xanthan gum
  • 1/2 tsp sea salt

Directions

Preheat oven to 325.

In food processor or blender place the bananas, oil and maple syrup and blend, then pour mix in bowl. If you don’t have a blender, then mash the bananas with a fork and blend in a bowl.

Add the rest of the ingredients to banana mixture and mix well. Place mixture into a greased bread pan and bake for 50 minutes or until a toothpick poked into the center comes out clean.

Let cool, then serve and enjoy!
