Grilled Balsamic Portabella Mushrooms

The other night, it was the perfect night for grilling. My sister and her girls came over and we had a delicious dinner and visited with our Dad.

My favorite food to grill is portabellas. They’re just soooooo good. These went perfectly with a vegetable and rice pilaf, corn on the cob, and watermelon! Soooo summery. This recipe is per portabella… A person could eat one to two of these in a meal, depending on how hungry you are.

  • 1 portabella, wiped clean and stem removed
  • 1 tsp sunflower oil
  • 2 tsp balsamic vinegar
  • pinch of sea salt
  • 1/2 tsp black pepper

A half hour before you begin to grill, put mushrooms grills side up in shallow pan or bowl. Pour on vinegar, oil, and seasonings. Allow to marinade for a half hour.

Heat grill to medium low heat. You can prepare these in foil or without, depending on whether or not it’s a grill used to cook meat.

Once grill is heated, place mushrooms on top rack and grill for ten minutes, then flip. Grill for another 5 minutes or until tender.

Serve and enjoy!

  1. Hey Kayse! Do you scrape out the gills when you grill your mushrooms? I have found that leaving the gills on when baking in the oven can make them taste kind of dirty. What do you think?

    1. I guess I don’t mind that ‘earthy’ taste, myself. If you marinade them, it might take some of that flavor away. Otherwise, just scrape the gills out.
I am sooooo excited to see you soon! Even if you only have an hour to spend with me over your vacation, I want to plan something special for us to do…. Like climb the rocks at Eagle Park or have a grilling feast.
