Baked Falafel

Last week, when Caeli, at Little Vegan Bear posted this recipe, I just had to make it!

It was super delicious! I used fresh herbs from my garden, which made it all that much more wonderful. I served it with fresh orange bell pepper slices, black olives, local cucumbers, and steamed kale from my garden.

I blended together cucumber, tahini, sunflower seeds, almond milk, herbs, and a bit of salt for a quick tzatziki type of dressing.
