Yummmmm, nothing gets better than making a meal with delicious ingredients from your garden. One of my favorite restaurants serves veggie fajitas- with cauliflower and mushrooms and carrots. For some reason, it hadn’t occurred to me to put those veggies on a fajita. So, when I was trying to figure out what to toss together for dinner, I tossed some garden veggies in a skillet and made some lovely burritos.
- 1 cup cooked black beans
- 1 cup cooked brown or white rice
- 1/2 yellow onion, diced
- 1-2 small potatoes, diced
- 1 small carrot, diced
- 1 cup kale shreds
- 1-2 Tbsp sunflower oil, or other high heat oil
- 1 tsp sea salt
- 1/2 tsp black pepper
- 1/4 tsp cumin
- Gluten free tortillas
- hot sauce (optional)
Heat oil in skillet over medium.
Add onions and saute until tender.
Add carrots and saute until just tender. Add potatoes and seasonings and saute until tender.
Layer rice, beans, veggies, and kale onto tortilla.
Drizzle with hot sauce if desired. Serve.
These would be especially great with fresh squeezed lime juice… The garden fresh veggie taste with fresh lime juice?!?! Yes.
