Gluten Free Vegan French Onion Soup

Mmmmmm… What is it about French Onion Soup that is so comforting? The salty broth? The sweet caramelized onions? Either way, I can eat bowlful after bowlful. This recipe tastes quite a bit like the real thing. I just haven’t found a gluten free bread that I like yet, or a recipe that isn’t crazy expensive to make (any suggestions?), so I don’t get to put croutons or a slice of baguette on top…. But this is still delicious!

Ingredients

  • 1-2 sweet onions, sliced thinly
  • 1 Tbsp oil (something that stands up to high heat)
  • 1-2 tsp sea salt
  • 2 Tbsp Coconut Aminos (or Tamari)
  • 1 Tbsp nutritional yeast
  • 1 tsp Thyme

Heat oil on medium heat and saute onions until caramelized. Add salt, thyme, and coconut aminos. Pour in enough water to cover.

Simmer for a few minutes until onions have flavored the broth.

Heat broiler in oven.

Ladle soup into ramekin and sprinkle nutritional yeast on top. Drizzleย a bit of oil on top of nutritional yeast. Place under broiler until nutritional yeast begins to brown.

Serve and enjoy!
