Roasted Garlic Vinaigrette

I don’t remember the last time I bought a bottle of salad dressing at the store. It’s been years, I think. It’s just sooo much simpler and healthier making my own!

I loooove roasted garlic. If you’ve never eaten roasted garlic, you must try it. It’s so delicious when it’s caramelized. This is a quick, simple dressing that most anyone will enjoy.


  • 1 whole bulb garlic
  • 1 tsp sea salt
  • 2 Tbsp olive oil
  • 1/4 cup apple cider vinegar
  • 1/4 tsp black pepper

Preheat oven to 350 degrees Fahrenheit. Wrap garlic bulb in foil and roast for a half hour.

Remove garlic bulb from oven and let cool. Slice off root end and squeeze the bulb at the top. Most of the garlic will ooze out of it’s skin.

Mince garlic and whisk together with all other ingredients. The flavor gets better if you let it sit in the refrigerator for an hour or so first.

Serve over a salad. Enjoy!
