Oh my goodness. This grilled salad had me so happy. It’s finally feeling a little more summery around here. So it’s time to light the grill and bring on the loads of produce. It was super simple and so delicious.
- 1 medium sized tomato, halved
- 1 leek, halved
- 1 romaine heart, halved
- 1 yellow squash, halved
- olive oil
- seasoned salt, to taste
Heat a grill to medium heat. Drizzle the veggies with olive oil and sprinkle with season salt.
I used a cast iron pan on for the tomatoes so they didn’t drip everywhere. It seems like you might not need to, mine didn’t stick too terribly.
First, grill the tomatoes, squash, and leeks. They should soften and cook through after about 15 – 20 minutes. When they have about 5 minutes left, put the lettuce on the grill.
Remove from the grill and slice and serve with a vinaigrette.
